Another reader recipe winner this issue, from Sharon Danelak, who submitted a spread that is as delicious on your morning toast as it is topping a whipped cream iced cake. She says, “This recipe is an excellent way to use up really large zucchini that have been overlooked in the garden. Just peel, cut into quarters lengthwise and remove the centre pithy part.”

This simple soup can be made with any squash. For this version, we used vegetable marrow. Substitute the chicken stock for vegetable and omit sour cream for a vegan option.
