If you are lacking in one ingredient, don’t sweat it, add a little parm instead of the feta, or grilled eggplant instead of the pickled. Most of the time when I’m eating this pasta it’s with my wife Sue. If I’m busy, she makes it. If she’s busy it’s up to me. It’s not so much my dish as ours. –Terry Gereta


Angel hair pasta with feta and wilted greens

1 Tbsp chopped hot pickled eggplant
2 pickled artichokes, quartered
2 Tbsp chopped roasted red pepper
1 tomato, chopped
6 Kalamata olives
4 roasted garlic cloves
Salt and pepper to taste
Angel hair pasta
Handful of baby mixed field greens
1/2 cup feta cheese

In a bowl, mix the first seven ingredients together and let stand in a warm place for 15 minutes, or in a 350° F oven for five minutes.
Boil pasta in salted water until al dente.
Toss with the warm mixture, field greens and feta.

Serves two.
