To throw your own temaki party, follow these simple steps:
1. Gather ingredients for the filling–be creative and prepare a lot of fillings so your guests have many to choose from. You should also have wasabi, soy sauce and pickled ginger on hand.
2. Cook and prepare the rice. For instructions from Masa on how to cook the rice, click here.
3. Place a sheet of nori (seaweed), cut in half, on the palm of your hand.
4. Scoop a thin layer of rice onto the sheet.
5. Arrange the fillings on the centre of the rice.
6. When all of the fillings are in place, take the lower left corner of the sheet and bring it all the way to the top middle edge, rolling the sheet into a cone shape around the fillings.
7. Enjoy!
To cook the rice:
To prepare the rice, you must first rinse it in cold water for several minutes. Keep changing the water until it runs clear. Masa says you can cook the rice using a normal rice cooker, but you should only use short- or medium-grain rice.
Once you take the rice out of the rice cooker, flatten it on a hard surface. For an authentic Japanese experience, you can scoop the rice into a large wooden bowl – but any kind of large bowl should work just fine.
Sprinkle the rice with sushi vinegar to bring out the flavour and make the rice stick together. For every cup of rice, use 30 ml of vinegar. "Cut" the sushi vinegar into the rice with a wooden spoon, being careful not to squish the grains of rice together. Let the rice cool off for a moment – you should see steam rising from it. When you can’t see anymore steam, flip the rice over so it can cool down and is evenly coated with vinegar.
